Today’s strawberry picking inspired these adorable single-serving shortcakes. I found mini cast iron skillets made by Lodge earlier in the year and decided this was a great opportunity to try them out.
Kids love individual desserts, and it’s easy enough they can make it and decorate themselves– you don’t even need a recipe. Grab a boxed angel food cake and follow box directions. Which is basically add water to the powdered mix and use a hand mixer to blend. Lightly grease pan/skillets with olive oil spray.
I poured the mix into five mini iron skillets (used 3.5″ skillets), and still had enough mix to fill a bundt pan. Place the skillets on a cookie sheet to easily get them in and out of the oven. Bake in skillets for about 20-25 minutes at 350 degrees until lightly brown on top. Leave the bundt pan in for about 40 minutes total. Easy peasy!
Once the skillets are finished, let rest on a cooling rack. Just before serving, add fresh strawberries and whipped cream. You could add blueberries and a mini flag for Independence Day, or strawberries with a little chocolate sauce for Valentines. They would also be adorable for a Mother’s Day brunch, or springtime wedding shower.
