Who else loves mini desserts? It means you can eat more of them, right?
These are fun for holiday events– they’re easy to make, festive and look beautiful on a tiered display or just a simple white platter.
Use a food processor to make your graham cracker crumbs, add 1/4 cups sugar and blend. Mix sugar/graham cracker crumbs with 1/2 cup melted butter and mix with a fork. Fill mini paper lined cups (in a mini muffin pan) with ~2 tsp. of crust and press to the bottom to form crusts. Set aside.
Beat 1 cup sugar, eggs, cream cheese and vanilla until well blended.
Fill each cup 2/3 full with cream cheese filling. Bake at 350 degrees for about 17-20 minutes. Cool on a cooling rack and store in an airtight container in the fridge.
Before serving (cold), add a cherry with filling to each cheesecake.
