In our family of homebodies, we love a cozy night in with a small spread of appetizers. This one is an old standby for me and the hubs. It’s also quick and easy for parties and works for any season. I think it evolved out of what happened to be in the fridge that we could whip up to resemble spinach dip at our favorite local restaurant. It’s pretty close.
Cook spinach, drain and squeeze out all water. When you think it’s drained, squeeze it out some more. Because nobody wants watery spinach dip.
Mix in cream cheese, sour cream, black olives, jalapeños and cracked pepper. Spoon into small baking dish and top with crumbled goat cheese. Bake for 20 minutes at 350.
Serve with pita chips, warm tortilla triangles or fresh french bread slices.
Easy Spinach Dip

Ingredients
- 1 box frozen organic spinach
- 1/2 block cream cheese
- 1 heaping tablespoon sour cream
- 2 tablespoons chopped black olives
- 1/4 cup chopped pickled jalapeños (add small amount of juice for more heat)
- Cracked pepper, to taste
- 1/4 cup crumbled goat cheese
Instructions
- Cook spinach, drain and squeeze out all water.
- Mix well-drained spinach with cream cheese, sour cream, black olives, jalapeños, cracked pepper. Spoon into small baking dish and top with crumbled goat cheese.
- Bake for 20 minutes at 350.
