The secret to this simple summer recipe is the champagne vinegar- it’s a bit lighter than traditional white vinegar. Cucumbers and vidalia onions are best straight out of the garden, but you could also find these summer treasures at your local farmers market. This dish hardly needs a recipe, just slice your veggies into a bowl, add water, vinegar, sea salt and pepper. Shake in a lidded bowl and serve several hours later. These are even better the next day. Yum!

Ingredients
- 3 medium cucumbers, peeled and sliced
- 3 slices of vidalia onion, halved
- 1 cup water
- 1/4 cup champagne vinegar
- Sea salt + pepper, to taste
Instructions
- Peel and slice your garden fresh cucumbers.
- Slice a vidalia onion and use 3 slices cut in half.
- Add water, champagne vinegar, sea salt, & pepper to a lidded bowl. Lightly shake the bowl, sit at room temperature for several hours or overnight before serving. Refrigerate any leftovers.
