Have you ever tried to make baked brie with puff pastry? I used to think it looked and sounded complicated– something my Grandpa would have called “high falutin.” 🙂
Well, looks can be deceiving. It’s quick and simple to put together, but looks fancy schmancy. It’s always a hit at parties, and along with chocolate fondue, it’s a become a must-have New Year’s Eve tradition with dear friends. But don’t worry, we have it more than once a year!

What You’ll Need
You only need a few ingredients– a wheel of brie, a sheet of this puff pastry, one egg and a little water. And, whatever you’re going to serve it with– in this case, these crackers, apples, and honey. Our favorite honey is from Savannah Bee.
The giant brie wheel (18 oz) from Costco is a great deal– I think it’s about $7. I’ve tried other brands of puff pastry, but Wewalka is my favorite. If you use this brand, it comes refrigerated, so no need to thaw. If you use a frozen brand, thaw first.
Let’s Make Baked Brie
Unroll/unfold your puff pastry on a pan or clean, countertop. I gently roll it out a bit thinner, but you could also just stretch it with your hands.
The cheese comes in a round box, and is wrapped in plastic. Remove the plastic and place your cheese in the center of the puff pastry. Next, begin to fold pastry corners and edges around the cheese as shown.
I usually end up with this little knob of pastry on top, and twist and seal together. I’ve seen extra pastry used on top to make it decorative with cut shapes or a bow. If you wanted to do this, you could skim a small amount off before you begin folding. One sheet of pastry is plenty to do it either way.
Place your pastry-covered brie on a lightly-greased cookie sheet (I use olive oil spray) and lightly brush with the egg/water mixture. This helps the pastry brown nicely without burning.
Bake + Serve
Bake it for 25 minutes and allow it to cool for about 20 minutes. Voila, baked brie with puff pastry!
Serve with crackers, Granny Smith apple slices and honey. Delicious with a glass of pinot grigio or chardonnay.

Ingredients
- 1 sheet, European Puff Pastry (thawed)
- 1 (18-ounce) Brie cheese round
- 1 egg
- 1 tbsp. water
Instructions
- Pre-heat the oven to 400°F.
- Unroll the puff pastry sheet, lightly roll the dough.
- Place the brie in the center. Fold the pastry up and around the cheese to cover. Press to seal.
- Beat the egg and water in a small bowl.
- Place on a baking sheet.
- Brush with the egg mixture.
- Bake for 25 minutes or until the pastry is golden brown. Let stand for 20 minutes before serving.
- Serve with sliced apples (we use Granny Smith), honey and table water or lavash crackers.
